Eggless Vanilla Chocolate Chip Cupcake

Fluffy and spongy eggless Vanilla Chocolate chip Cupcakes (Makes 9 medium size cupcakes)

Dry Ingredients:
140g all purpose flour
1 tsp baking soda
1/2 tsp baking powder
60g butter (salted)
1 tbsp sugar (can increase more if you want sweeter cakes)
Chocolate chips ( whichever amount you like)

Wet Ingredients:
1/2 cup condensed milk
130ml soda water (plain type)
1 tsp vanilla extract

Method:
Sieve Flour, Baking powder, Baking soda and mix them well
Use Mixer to whisk the butter and sugar, when batter is smooth, add condensed milk and whisk until smooth
Add in half portion of flour and soda water into batter and whisk until smooth
Add in remaining half portion of flour and soda water into batter and whisk until smooth
Add in the vanilla extract and mix well.
Preheat oven at 180 degrees for 10 mins
Fill half of cupcakes liner with batter, add in chocolate chips before topping off with batter and more chocolate chips until cupcake liner is 2/3 fill. (Dont be like me, over fill the liners and ended up with overflowed cupcakes!)
Bake at 200 degrees for 30 mins.


Note: if you prefer cake to be more dense like a muffin, add 10-20g of flour to receipe. increase the condensed milk to 2-3 tbsp more

Steamed Vegan Chocolate Cake

This is a dairy-free, eggless receipe for a delicious Chocolate Cake that is suitable for Vegans. 

Dry ingredients:
1.5 cups / 180gms all purpose flour ( I used prima top flour)
1 cup caster sugar ( around 16 tbsp) ( I put 100 gms only)
1/4 cup unsweetened choco powder ( 57 gms) ( I used phoon huat brand choco powder)
1/2 tsp fine salt
1 tsp baking soda ( this is very important to add in along with vinegar to make it fluffy without the eggs)

Wet ingredients

1 cup ice cold water ( 250ml)
1/3 cup vegetable oil (70ml)
1tsp vanilla essence (5ml)
1tbsp apple cider vinegar (15ml) ( I used black bean vinegar, u can use any as long as it's the sour type)

Method:

Shift all the dry ingredients and mix well together
Make a well in the dry ingredients and add in the wet ingredients which had been mixed together
Stir well until no lumps
Pour batter into square or round pan. Lift up and tap pan on tabletop 2 - 3 times to release air bubbles.
Put batter into pre-heated oven of 350 degrees or just place in steamer. If using steamer, u have to place a piece of aluminium foil on top to prevent water vapour from going into batter.

Bake it for 30-35 mins or until skewer comes out clean in the middle of cake.

For steam method. U can steam up to 45-50 mins. No worries abt getting it burnt cos it doesn't. Just have to make sure there is enough water in steamer. Skewer also must come out clean from middle of cake to ensure it's cooked thoroughly.

The question "why choose vegetarianism?" has many valid answers. People choose to become vegetarians for many different reasons � probably as many reasons as there are vegetarians!  But most vegetarians cite one or more of the following issues:

  • Religious restrictions: Hinduism and Buddhism hold vegetarianism as an ideal way to promote nonviolence and spiritual fulfillment.  If Kosher or Halal meat isn't available, observant Jews and Muslims keep a vegetarian diet.  Other religious groups that avoid meat include Seventh Day Adventists and Jains.
  • Environmental degradation:  Many environmentalists assert that the large-scale meat and poultry production is environmentally unsustainable.  They point to issues with water quality, waste disposal, overuse of antibiotics, and other concerns.
  • Animal rights issues:  Ethical vegetarians are concerned about animal cruelty.  Many animals live in truly abysmal conditions and are treated horribly prior to and during slaughter.
  • Food safety: Approximately 5,000 Americans die of food-borne diseases each year.  There have been many large-scale recalls of meat contaminated with e-coli and many local incidents where restaurant patrons were sickened by improperly cooked meat and eggs.
This once-exotic food choice is becoming more and more popular for many reasons.  Vegetarian kids and teenagers are often motivated by idealism � and by the large number of famous and celebrity vegetarians, including Adam Carson of AFI, Larry Mullen, Jr. of U2, and pop singer, Pink.

Types Of Vegetarians

When you're cooking for vegetarians, it helps to know what "kind" they are.  Yes, there are many different kinds of vegetarians.  Every person makes their own individual food choices, but most vegetarians can be divided into these main categories:
  • Vegans avoid all animal products.  They don't eat eggs, dairy products, or even honey.  Many vegans also avoid anything made from animal products, such as leather, fur, and wool.
  • Fruitarians eat only fruits, seeds, nuts, and other plant components that can be gathered without harming the plant.
  • Lacto-vegetarians eat dairy products, but not eggs.  They may or may not avoid non-dietary use of animal products.
  • Lacto-ovo vegetarians eat both eggs and dairy products.  This is the most common group of vegetarians and what most people think of when someone says they're "a vegetarian."
  • Pesce-vegetarians include fish in their diet.
  • Pollo-vegetarians eat fowl, such as chicken and turkey, but avoid red meat and pork.
  • Flexitarians mainly eat vegetarian food, but will occasionally make exceptions.
Very strict vegetarians don't really consider people who place themselves in the pesce, pollo, or flexitarian categories to be "real" vegetarians, but it's not like there are firm labeling guidelines.  Many people begin their transition to vegetarianism by eliminating red meat and then slowly purging their diet of other animal products. And once people discover the incredible variety of vegetarian choices, they'll never miss the meat!



I think i can be classified as a Lacto-Vegetarian and this means that i dont take eggs but i do take all other types of vegetables.
I know some Lacto-vegetarians and Lacto-ovo vegetarians who doesnt eat vegetables like garlic, onion, spring onion and leek.
